Zucchini Bread

 

Makes 2 large or 3-4 small loaves

Bake at 325 degrees in greased pans 40-60 minutes or until tester inserted in the center comes out clean

 

1 C Sunrise Turkey Red Heritage Flour (this recipe works equally well with any of the 3 grinds)

1 tsp salt

1 tsp baking soda

1 tsp baking powder

1 tsp ground cinnamon

3 eggs

1 C oil (coconut oil gives a wonderful flavor)

2 ½ C organic white sugar

2 tsp vanilla extract (can use more if you like the vanilla flavor)

2 C grated zucchini

1 C chopped nuts of your choice (optional)

 

-Sift together flour, salt, baking powder, soda, and cinnamon.

-In separate large bowl, beat eggs, oil, vanilla, and sugar. Add sifted ingredients and beat well. Stir in zucchini and nuts until well combined.

-Pour batter into prepared pans.

-When done, remove bread from pans immediately to cooling rack.
