Freshly Milled Flours

Nothing is added or taken out, nor is it heated above 100 degrees. There are no preservatives so it is recommended that these flours be stored in the freezer for maximum freshness.

Red Hard Spring Wheat

A high gluten (over 14% protein) flour for making 100% whole wheat bread.  Since this is milled fresh you don't need to add any white flour (see our recipe for an easy and delicious no-knead bread).

Soft White Winter Wheat

A lower gluten flour for use in making non-yeast products such as pastries, sweet breads, muffins, etc.  This, too, is a whole grain flour with nothing removed.

For making homemade pastas of all kinds.
