Organic Flour and Grain

Stone ground, organic, non-GMO, no toxic chemicals, non-bleached, non-bromated.  Since there are no preservatives it is recommended that these flours be stored in the freezer for maximum freshness. All our flours are dry-milled which means they will absorb a little more liquid than other flours.

                                                      FLOURS

Hard Red Spring Wheat -  100% whole grain. For breads and other yeast products.  14% protein.

Soft White Winter Wheat - 100% whole grain with a lower gluten content.  Used for non-yeast baking such as sweet breads and pastries.

Rye - 100% whole grain.  Two grinds - fine and coarse (pumpernickel).

Durum - 100% whole grain.  Used for pasta, flatbreads, crackers, etc.

Spelt - 100% whole grain. An alternative to Hard Red Spring Wheat, used for yeast products.

Golden White Pastry Flour - Soft White Winter Wheat with 95% of the bran removed.  Used for whiter, lighter non-yeast products.

Oat flour - a low-gluten flour which can be used in pastries or combined with other flours for a nutty taste.

All-Purpose Flour - a blend of Hard Red Spring and Soft White Winter Wheats with 95% of the bran removed.  A healthy white flour for all your baking needs.

Pizza Flour - a delicate blend of Red Hard Spring Wheat and Soft White Winter Wheat. Similar to Italian-style 00 flour.  It has all the nutritious elements of our whole wheat flours with just the bran removed.  A prize-winning flour.

Wheat, rye, and spelt berries as well as oat groats also are available.

Flaked Oatmeal - flaked to order for a delicious, nutty breakfast cereal.

Flaked Oats N Rye - a 50-50 combination of two grains with distinct flavors that blend for an amazing taste to start your day.

7 Grain Cereal - a blend of cracked wheat, rye grits, barley grits, millet, cornmeal, flax, and steel cut oats. A real stick-to-your-ribs way to start the day.

5 Grain Pancake Mix  - a blend of whole wheat, buckwheat, barley, oat, & soy flours. Makes nutty tasting pancakes.

Steel Cut Oats - oat groats that have been cut into smaller pieces.

 

                                                      CORN

Cornmeal - milled fresh from open-pollinated corn. Comes in two grinds - fine and coarse.  Makes polenta that actually tastes like corn.
