Banana Bread with Oat Flour
Use organic ingredients when possible.
1/2 C butter
1/2 C white sugar
2 eggs
1 3/4 C sifted Sunrise Flour Mill Oat Flour
1 t baking powder
1/2 t baking soda
1/2 t salt
1-2 t pure vanilla
1 C mashed ripe banana
Optional additions:
1/2 C chopped nuts
!/2 C chocolate chips
Cream together shortening and sugar.
Add eggs and beat well.
Stir together dry ingredients and add to creamed mixture alternately with banana. Blend well after each addition.
Stir in vanilla and optional ingredients, mixing well after each addition.
Pour into well-greased loaf pan. Will make one large, 2 medium, or 4 small loaves. Fill pans at least 3/4 full as it will not rise as much as when using white flour.
Bake in 350 degree oven 40 minutes or until toothpick inserted comes out clean. Remove from pan and cool on rack.
